A cheesy return

Happy Diwali everyone. Back from my holiday the first thing I ate was cheese and Lebovitz’s cheese ball recipe was too good to resist. Three types of cheese, nuts and dried fruit spiced to perfection. Simply delicious.

35g pecans

2tsp butter

pinch of salt

Preheat oven to 180C. Toss the nuts in butter and salt and spread on a tray. Roast for 10 minutes. Stir in between, keep an eye and don’t let them burn. Cool and then chop.

Cheese ball

55g butter

35g blue cheese

40 g fetta or goats cheese

85g cream cheese

1/4 cup cranberries/ dates

2Tb spring onions/ chives

1 tsp hot chilli sauce like Sriracha

2Tb parsely

Bring all the cheese to room temperature. Add all the other ingredients except the nuts and mix very well till smooth. I used the Kitchenaid with a paddle attachment to mix. Store in the fridge for half an hour.

Now remove and shape into a ball. Spread the chopped nuts in a plate and the parsely in another plate. Roll the cheese ball gently on the nutty mix to cover the ball fully then do the same with the parsely. (I did not use parsely)

Serve at room temperature on crackers with some jam. Beautiful!

Serves 6-8
